ABSTRACT

Peeling of ginger is an important and labourious unit operation. Traditionally, ginger peeling involves scraping fully matured rhizomes with bamboo-splits having pointed ends, to remove the outer skin. This takes place before drying to accelerate the drying process. Few industries that process ginger in the country make use of imported machinery due to non-availability of simple locally developed machines for its processing. This has adversely affected the production and marketing of ginger in Nigeria, in spite of its great economic potentials. This paper focused on a conceptual design of a motorized rotary ginger peeling machine which will be locally fabricated, made from readily available materials, cheap and within the buying capacity of local farmers. Also, the machine will be high in capacity compared to manual operation and have the ability to reduce labour input in traditional method of peeling.
