ABSTRACT
This
study examined the effects of storage time, packaging condition, and their
interaction on the nutritional and proximate quality of ground egusi over a
three-month period. Ground egusi was stored in opaque and transparent
hermetically sealed glass containers and analyzed at Months 1, 2, and 3 for
minerals, vitamins, and proximate composition using Atomic Absorption
Spectrophotometry (AAS), High-performance Liquid Chromatography (HPLC) and
standard methods outlined by the Association of Official Analytical Chemist
